Cottage Pie

Ingredients

2 sweet potato’s (cooked and mashed) around 3 cups total

500g beef mince

1 onion

2 carrots

1 cup frozen veggies

2 tbs garlic and herb

2 tbs vegetable broth

2 tbs tomato paste

1 tbs tapioca flour

1 tbs Worcestershire sauce

1 cup water


Get your sweet potato mash happening first, just potato and water until they are ready to mash.

Over medium heat in non-stick pan place onion and cook until soft.

Add veggies and cook until not frozen

Add mince and cook until browned

Add in seasonings, tomato paste and tapioca flour. Give it a good mix

Add water and simmer for around 15 minutes.

Place in an oven safe dish and place mash on top, use a fork to spread out the mash.

Place in the oven at 200º degrees for 30 minutes
