Simple yet yummy and perfect for meal prep.
Ingredients
2 Chicken breasts (diced)
2 Carrots (thinly sliced)
1 Red Capsicum (sliced)
1 cup of Snap green beans
1 can Coconut Cream
2 Tbs Nutritional yeast
1 Tbs of garlic and herb seasoning
1 Tbs Arrowroot powder in 1 cup of water
In a large pan heat coconut cream, nutritional yeast and seasoning until boiling.
Add chicken, carrots and water and cook covered for around 15 minutes.
Uncover and cook for another 10 minutes, adding in beans and capsicum.
Serve over rice
This makes around 6 serves
