Ingredients
500g Chicken Mince
1/2 Red onion (diced)
2 Carrots (grated)
1 red capsicum (diced)
1/2 bag frozen Spinach
1/4 cup coconut amino
2 tablespoons nutraorganic vegetable broth
1 tablespoon mingles Herb and garlic
1 Tablespoon nutritional yeast
Cos lettuce to serve
In a nonstick pan over medium heat cook the onions for around 2 minutes, add the grated carrot and cook for another few minutes, add in chicken mince and break up so there are no lumps.
Once the chicken is browned add the frozen spinach and capsicum and cook for another 2 minutes.
Add in the coconut aminos and all other ingredients and let cook for around 5 mins.
Wash and prep cos lettuce.
Serve mince mix in lettuce as a wrap add brown rice with the mixture for extra carbs.
