Butter Chicken

2 tbs Coconut oil

1 onion (diced)

2 Garlic cloves (crushed)

2 tbs curry powder

2 tbs nutritional yeast

1 tbs nutraorganics vegetable broth

2 tbs tomato paste

1 x 400ml coconut milk

1/2 lemon (juiced)

2 chicken breasts (diced)


In a large pan, over medium heat, add coconut oil, onion, and garlic, and cook until onion is soft.

Add curry powder, nutritional yeast, and broth and give it a good mix, add tomato paste, and mix until well combined.

Add in coconut milk and lemon juice, mix well

Add in chicken.

Place a lid on and let simmer for 10 minutes

Uncover and cook for a further 10 minutes


Serve with rice and vegetables.


Simple, easy and the perfect family dinner.
