Breakfast Vegetable Salsa

My breakfast vegetable salsa is the perfect side to have in the morning to up your vegetable intake. This recipe in around 4/5 serves. It will last in the fridge for 4 days.


10 slices of short cut bacon (cut into strips)

1/2 red onion (diced)

1 punnet cherry tomatos (halved)

4 Button mushrooms (diced)

1 large red capsicum (diced)

2 handfuls of spinach (diced)

salt and pepper to taste

Place bacon into a pan over medium heat. Once bacon has browned add in onion and mushrooms stir for around 2 minutes add in the rest of the ingredients and stir until spinach has softened. Add salt and pepper to taste.

Store in the fridge and enjoy with your eggs in the morning or use as a side for lunch.
