Banana Bread

Gluten free and lunch box friendly.


2 bananas

2 large eggs

1/2 cup coconut oil (melted)

1/2 coconut sugar

1 teaspoon of baking powder

2 teaspoons cinnamon

1 2/3 Oat flour

Pre-heat oven to 160ºC.

Place baking paper in to loaf tin.

Mash the bananas in a large mixing bowl.

Add in eggs and coconut oil and mix well.

Add in the rest of the ingredients and mix well.

Place mixture into tin, let sit for a few minutes then place in the over.

Cook for 40 to 50 minutes or until cooked through.

Allow it to cook before cutting.

Serves on its own or with butter.
